Uchū Hospitality: Timed Omakase Hit Sushi on Jones Expands With a Japanese Restaurant in Williamsburg

It will offer the omakase, plus other Japanese dishes such as chicken yakitori

Celebrated omakase counter Sushi on Jones — the original one that limits diners to 30 minutes — is doing away with the time limit at a new Williamsburg restaurant.

Also to be called Sushi on Jones, the restaurant at 97 North 10th St., between Wythe Avenue and Berry Street, will have eight counter seats for its acclaimed omakase, plus another 40 for an expanded menu of Japanese fare. Dishes from Sushi on Jones executive chef Corwin Kave will include chicken skewers with hot mustard and lemon and fried tuna belly with spicy cabbage and tare sauce.

Adjacent to the dining room — with a big skylight and designed by MN Design Professional Corporation — is an 18-seat cocktail bar. Sushi on Jones owner Derek Feldman is known for the upscale cocktail program at Uchu, his fine-dining kaiseki restaurant on the Lower East Side.

Feldman’s restaurant group Uchu Hospitality is in expansion mode with this new restaurant, as well as another timed omakase location coming in Urbanspace Vanderbilt and a pop-up in Newport, Rhode Island. The Urbanspace Vanderbilt counter will also have grab-and-go sushi boxes.

But Feldman’s FiDi wagyu sandwich restaurant Don Wagyu will close on August 16 and relocate to the Bowery Market food hall. It had opened to much hype, which quickly turned into derision. The new location will also offer brunch and delivery.

Feldman built his name with the first Sushi on Jones, which Times critic Pete Wells called his “favorite” bare-bones sushi in NYC. Then, Uchu cemented his status as a formidable restaurateur with its luxuries.

The larger, more expansive Sushi on Jones is on track to open in November.
