Ancient Grain Millet and Cauliflower Mash served with Garlic Gravy

Serves 6

Ingredients

  • 2 cups Raw Millet
  • 2 T Olive Oil
  • 6 cups of water
  • 1 oz. Salt
  • ½ head of raw cauliflower
  • 1 Yellow Onion
  • 3 cloves Garlic
  • 4 Cups Veg Stock (one Veg Stock bout in Stores)
  • 2 T Starch (Arrowroot)
  • Salt & Pepper

Instructions

Millet Mash

  1. In a large pot, turn heat to med-low and add 1 T of olive oil to the pan.
  2. Cut onion into apple wedge slices, and cut florets out of the cauliflower, and add to the pot.
  3. Slow cook and turn once golden brown on each side. Wash the millet in a strainer and then add to the pot.
  4. Add 6 cups of water and cover. Cook for 20-30 minutes or until the grain is fully cooked.
  5. Once done, mash with a potato masher. Place in serving bowl and cover.

Garlic Gravy

  1. In a small saucepan, turn heat to med-low and add 1 T of olive oil to the pan.
  2. Cut garlic and add to the pot.
  3. Slow cook and turn once golden brown on each side.
  4. Add vegetable stock and cook for 7- 10 minutes until hot.
  5. Add in the starch to a small cup of water and stir, getting rid of any clumps of starch.
  6. Add to gravy and salt and pepper to your liking.
