Founded by entrepreneur, Derek Feldman, Uchū Hospitality, is a New York City restaurant group that owns umbrella concepts Don Wagyu, Sushi on Jones and the Michelin-starred restaurant Uchū, consisting of sister concepts Bar Uchū and Ichimura at Uchū. Inspired by his travels abroad, Feldman strives to curate all- encompassing experiences for guests by sharing his distinct understanding of hospitality. Each restaurant in the group embodies their own take on Japanese cuisine, transporting individuals from New York City to a cultural oasis, through detail-oriented, personalized service and elevated food and beverage programming.
Uchū’s Sushi Bar and Kaiseki Counters bring an utterly transportive and traditional Japanese dining experience in the heart of the Lower East Side. Guests are welcomed to a serene setting to be served incomparable and ever-changing tasting menus prepared by two Michelin-starred chefs – the legendary Chef Eiji Ichimura and Chef Samuel Clonts.
Sushi on Jones is New York’s first al fresco omakase bar, offering traditional 12-piece tastings in 30 minutes for $58. With an outdoor flagship in The Bowery Market and an indoor location on West 10th Street, Sushi on Jones brings the best of the traditional Japanese experience for the New York market. This fall, Sushi on Jones will expand to Urbanspace Vanderbilt, featuring a grab-and-go section, and North Williamsburg with its first-ever full-service omakase restaurant curated by Sushi on Jones’ Executive Chef, Corwin Kave.
Don Wagyu is the only restaurant in New York devoted to selling wagyu beef sandwiches, including the washugyu, the A5 miyazaki wagyu and the A5 Ozaki. This September, Don Wagyu will be moving from its original location in the financial district to Bowery Market. The new location will feature an expanded menu by Executive Chef Corwin Kave.
